
So, I have too much time on my hands....at least I'm not into too much trouble!
I found a recipe to make ricotta cheese and had to try it!
You heat it to 185 degrees. (there should be a keyboard key for the degree symbol!)

Stir it and put it into several layers of cheese cloth and let it hang to drain.

Wha-La! Cheese! It needed just a tad of salt, but was yummy in my Spanakopita that I made yesterday!

Great looking cheese! What kind of milk did you use?
I used 1% and buttermilk. Use 4 to 1 ratio...milk to buttermilk. I saw a recipe for matzarella but haven't tried it yet.
