I took H to the train station early Friday am. He headed to MN for the weekend before heading out to central NE for the big Husker Harvest Farm Show.
Oh, how he loves those things.
NOT!
OH well, he needed some guy time golfing with buddies and Christopher. I can never begrudge him that. But that has made for a long week here.
Saturday and Sunday, I cleaned the bathroom, bedroom and sorted some closet stuff to be donated. Did some laundry and ironing. Still have about 2 or 3 loads left to do. You know me....can't ever quite get that last load done.....
Oh well.
I just made up some basil flower pesto to freeze up.
I know, different.
The basil went to flower in a big way when we were in England and I haven't quite felt up to the task of making pesto. And with all of the flowers, I thought, why not try it.
So I did.
I did 2 batches. And you know me....never one to measure....
so I put in one clove of elephant garlic in to each batch,
a bowlful of flowers,
Parmesan cheese,
lemon juice.
So, it is my normal recipe, except the flowers and elephant garlic. Normally just use the regular garlic, but I have to admit that I was feeling lazy and didn't really want to clean all of those cloves! So I didn't. Just one.
Overall, it seems milder than last year's efforts. Not sure if that is the elephant garlic or the basil flowers.
The lemon juice really can't be found in there and I put several tablespoons in each batch. That kind of bums me out as I like the brightness that the lemon juice adds.
And one batch is saltier than the other.....only cuz I put more parm in it. Otherwise, no salt was added to either batch.
But they have been jarred and frozen. It will be interesting to see how they "unfreeze" this winter. We've found that things can come out differently from what you put into the freezer!!
I did go to lunch with Sen yesterday. That was fun. We went grocery shopping at ASSI, which is a huge international grocery store. They have a food court so we shopped then ate. We've walked our dogs a few evenings which is different. Khaki was quite excitable and I'm not sure if he understood why Fred doesn't have to always be on a leash....
Plan on getting together with Dakneese, maybe on Thursday. Not sure what we'll do...I'd like to show her what I've come up with for a kitchen floor plan. We gave up on the designer we had: They had a nice plan, but was super expensive. And then we are looking forward to having Charlie this coming weekend. Should be good fun for the boys!
