This morning, after a dog walk in the rain, I changed into dry clothes & then brought in a bag of lemons from the garage. I soaked & scrubbed them in baking soda. I used the baking soda because I want to use the rinds & didn't want to leave any soap residue.
Then I started cutting & juicing. I made some preserved lemons that will be ready in a month and are, oh, so yummy. I also have 3 containers of juice in the freezer. I zested some & have that in the dehydrater. I will either make up some lemon pepper or use it for popeperie (I can't spell it, but you know what I mean). I also used a potato peeler to take off some rinds & then I candied those. I'm not sure what to do with them, but online, say that they can be used for desserts. I had some spent sugar from that, so I just added some more lemons to see if I can flavor the sugar. It isn't much, so it it's hard to say how that will turn out. Since you boil the rinds & then cook it in a simple syrup, I ended up with 2 small jars of lemon flavored syrup that I put in the fridge. I have barely made a dent in my basket of lemons... but it was a start. Maybe I will start on the blood oranges later today....
